Dr. Amy Proulx, Professor of Culinary Innovation and Food Technology at Niagara College, Ontario, has been wild-crafting and harvesting wild mushrooms for three years on her 30-acres of land in the Niagara Region. She harvests porcini mushrooms in the months of October and November and in the spring months she harvests chanterelles from key areas of her forest.
